So Long, Seafood Chowder: Hello, Rock Lobster Bisque
Chef Geoff, of Seattle's renowned "Salty's on Alki Beach" seafood restaurant, has decided to retire his much-loved seafood chowder and replace it with a rock lobster bisque. The switch was motivated by Chef Geoff's concern for the future of the Northwest coast rock lobster population.
"The trouble is, there just aren't enough lobsters left in the wild to sustain a chowder dish," Chef Geoff said. "So I had to find a way to use more of them."
And that's how the rock lobster bisque was born. It features an all-lobster broth with a creamy roux and is served with crispy diced potatoes and fresh herbs.
This change is good news for both diners and the environment, as Chef Geoff plans to use only sustainably sourced rock lobsters in his bisque. And according to him, it's already proving popular with customers.
"The bisque is richer and creamier than the chowder, and it has a really nice lobster flavor," he said. "People are really loving it!"
